3 Healthy Breakfast Ideas for Summer & VIDEO!

Hey everyone! Now I know summer is not official for a couple more weeks but I couldn’t resist sharing these breakfast recipes! They are light, refreshing and loaded with summer fruits. I will have all the recipes below but this week I also made a VIDEO!! to go along with this post. If you’ve been following me for awhile, I normally post about twice a week but the past month and a bit has been very sporadic. I find myself creating recipes, taking photos and then never getting around to actually creating the blog post. I’ve just really not been into writing lately so I decided to make a video, because I still love sharing healthy recipes and everything nutrition related.

Let me know how you liked the video, I would really appreciate some feedback! I really enjoyed filming this, although staying in frame was a little challenging {as you may notice in the video:P}.

Almond Berry Overnight Oats

Description

Great healthy breakfast when you’re on-the-go! Crunchy & sweet!


Ingredients

Scale
  • 1 cup oats
  • 1 tbsp shredded almonds
  • 1/4 cup almond milk
  • 1 tbsp agave nectar
  • Mixed berries of your choice {blueberries, raspberries, blackberries, strawberries}

Instructions

  1. Add all ingredients except berries to a mason jar, stir and place in the fridge overnight.
  2. In the morning top with berries and bring with you to work or school!
  • Prep Time: 5 mins

Dragon Fruit Smoothie

Description

Sweet and refreshing smoothie that is light but will keep you full!


Ingredients

Scale
  • 1 dragon fruit
  • 1 frozen banana
  • 1/4 cup non fat greek yogurt
  • 1 tbsp chia seeds
  • 1 cup mixed berries
  • Splash of orange juice

Instructions

  1. Add all ingredients to high speed blender until smooth consistency.
  2. Enjoy!

Mini Pancakes

Description

4- ingredient mini pancakes that are quick, easy and filling!


Ingredients

Scale
  • 1 banana
  • 1/4 cup oats
  • 2 eggs
  • 1 tbsp chia seeds
  • Fruit for topping
  • Agave nectar {syrup}

Instructions

  1. Add all ingredients to blender until smooth consistency.
  2. Spray pan with non-stick cooking spray and pour batter onto pan {recipe will make 4 small pancakes}
  3. Once finished cooking, top with fresh fruit and agave nectar as syrup!
  • Prep Time: 5 mins
  • Cook Time: 10 mins
  • Category: Breakfast

    I love the video – I think it helps visually see how easy these recipes are to make and the fact that I am a visual person, I feel more confident in trying the recipes out… Hope to see more videos in future posts.
