I love, LOVE peanut sauce. And thankfully it’s super easy to whip together and throw on chicken, tofu, veggies, whatever! Making it yourself is so much better than prepackaged bottled peanut sauce – trust me!
This recipe is easy to make – sauté chicken, throw in any vegetables you have (you may need to sauté the veggies in a different pan if you don’t have one large pan). While the chicken and veggies are cooking, whip together the peanut sauce and BOOM. Healthy, quick dinner that’s super delicious!

This 30-Minute Chicken Stir-fry tossed in Peanut Sauce is quick and easy to make! Customize with whatever veggies you have on hand!
Ingredients
- 3 chicken breasts, skinless and boneless, chopped into 1-inch pieces
- 1 tsp olive oil + 1 tsp olive oil
- 2 cups broccoli, chopped
- 2 red bell peppers, sliced thinly
- 1 cup snap peas
- Pinch of salt
Peanut Sauce
- 1/2 cup natural smooth peanut butter
- 1/4 cup soy sauce (reduced sodium)
- 1/3 cup sesame oil
- 2 tbsp rice vinegar
- 1 inch fresh grated
- 2 cloves garlic
Garnish: chopped parsley, sesame seeds
Instructions
- Sauté 1 tsp olive oil, chicken and a pinch of salt for approximately 30 minutes (until chicken is fully cooked).
- In a separate pan, sauté 1 tsp olive oi, broccoli, bell peppers and snap peas for 15 minutes to soften.
- Add all peanut sauce ingredients to food processor (or blender) and pulse until ingredients are well combined.
- Putting it all together: Add chicken to vegetable pan then add 1/2 cup of the peanut sauce. Sauté for about 5 minutes.
Notes
- Peanut sauce recipe makes just over a cup. I suggest adding 1/2 cup of peanut sauce at first and then add more to your liking. Store extra in fridge for up to 3 days.
- Serve this dish over rice, noodles or simple on it’s own!
