Healthy snack idea that can be taken to work or school! Ready in less than 10 minutes and only 6 ingredients! This chickpea salad snack will keep you feeling full and energized!

Happy Monday!

Today I am happy to share with you a super easy snack idea. This chickpea salad only has 6 ingredients and can easily be made in a big batch and portioned out to bring with you to work or school for a snack! Chickpeas {also known as Garbanzo beans} are an excellent source of fibre. Fibre is always an important nutrient to look for when choosing healthy snacks because it will help keep you feeling full until your next meal. Chickpeas are also a great source of manganese, folate, copper, zinc, some protein and phosphorus.

I have also made this recipe with navy beans and it is also delicious! Feel free to try other types of beans with this recipe!

Description

Super easy chickpea salad recipe that will leave you feeling full until your next meal!


Ingredients

Scale
  • 1 540 mL can chickpeas, drained and rinsed
  • 2 tomatoes, chopped
  • 1/2 cucumber, chopped
  • 1/4 red onion, sliced
  • Juice from half a lemon
  • Dash of black pepper

Instructions

  1. In a large bowl, combine chickpeas, tomatoes, cucumber and red onion.
  2. Top with lemon juice.
  3. Portion out in smaller containers to have as a snack at work/school.
  4. Top with black pepper when ready to eat!
  • Prep Time: 10 mins
