I first tried bruschetta a few years ago at an Italian restaurant and absolutely loved it! The fresh ingredients, the sweet and salty taste from the tomatoes, basil and bread – seriously so good. As you will see in my recipe, it does not contain any added salt and should be eaten with whole wheat bread {or a healthy gluten-free bread} not white bread {no no no to white bread!} which is normally apart of bruschetta. A little salt is totally fine if you want to add a dash to this recipe, but most restaurants will way overdue it – and here we like to keep it healthy & simple right?! ;)
This recipe is honestly so easy and contains minimal ingredients. If possible, make this recipe a couple hours before serving so that the oil and vinegar can really soak into the tomatoes and give it even more flavour.
Vegan Bruschetta with Toasted Pita Bread
- Total Time: 10 mins
- Yield: 3 cups 1x
Description
Fresh, simple and delicious bruschetta recipe that is the perfect appetizer!
Ingredients
- 3 tomatoes, diced
- 1 garlic clove, minced
- 1/4 cup red onion, chopped into small pieces
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 cup basil, chopped
- Pepper for topping {optional}
- Whole Wheat Pita Bread or Healthy Gluten-Free alternative
Instructions
- In a medium size bowl, combine tomatoes and red onion
- In a separate bowl, stir together garlic, olive oil and balsamic vinegar
- Drizzle oil/vinegar/garlic mixture over tomatoes and red onion
- Top with basil and gently stir
- Refrigerate or serve right away on toasted pita bread
- Enjoy!
