Hope you all had a great new years! Mine was filled with family and friends and relaxation. I ran into a bit of a hiccup just after new years as my blog “crashed” and all I could do was wait. There are 2 posts (this one and Health Benefits of Kale) that I had already posted but were not saved, therefore if this posts looks a little different, that’s why! Anyways, everything worked out fine in the end, just need to do some touch ups!
Now on with the tasty recipe….
Hash browns were always one of my favorite breakfast foods growing up. I probably could have lived off these deep fried, super unhealthy popular breakfast food if I could! I recently found a way to still enjoy hash browns but in a healthy way. These are still crispy and delicious just like I remembered, but healthy! I also really like to eat them with a super easy avocado spread on toast. This spread takes less than 5 minutes to make and perfect when pressed for time in the morning. Both these breakfast foods would taste great with waffles, pancakes or eggs (stay tuned for these recipes!).

Description
Start the morning off right with a creamy avocado spread and crispy hash browns. This breakfast is filling and nourishing for the day ahead.
Ingredients
- Creamy avocado spread
- 1 avocado
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 5–8 macadamia nuts
- Add all ingredients to blender (I personally like to use the magic bullet as it’s perfect for blending small amounts) until the spread is thick and creamy. Spread on brown rice bread/toast.
- This spread can be used on approximately 3 pieces of bread/toast.
- Easy hash browns
- 2 potatoes
- 2 tbsp grape seed oil
- Sea salt
Instructions
- Preheat oven to 350 degrees F
- Rinse potatoes and cut into small cubed pieces
- In a plastic bag, add cubed potatoes, grape seed oil and sprinkle sea salt. Shake it up!
- Add potatoes to baking sheet (make sure they are spread out..)
- Mix up potatoes ever 5-10 minutes
- Once potatoes have browned (takes about 20 minutes) they are ready to be eaten
- Prep Time: 10 mins
- Cook Time: 20 mins
