Easy Instant Pot Risotto

This easy instant pot risotto recipe is a rich and creamy side dish. Made with arborio rice, Parmesan cheese and a few other simple ingredients. This dish compliments many meat and fish dishes.

What exactly is Risotto?

Risotto is a traditional Italian creamy rice dish made with a high starch rice called Arborio rice. When cooked, this rice provides a firm yet chewy and creamy texture compared to other kinds of rice.

Making risotto on the stove top typically requires a lot of your attention and time, that’s why I prefer making it in the Instant Pot as I can “set it and forget it”. Also, I like to keep my stove top free for the main dish I am cooking (which is typically this creamy garlic mushroom chicken recipe).

Ingredients

This recipe contains a few simple ingredients:

  • Butter | a must for added creaminess
  • Yellow onion
  • Garlic
  • Arborio rice | a must for making risotto, can be found in the rice section at most grocery stores
  • Vegetable broth | chicken broth also works!
  • Salt & black pepper
  • Frozen peas | I like the added texture of the peas in this recipe
  • Parmigiano-Reggiano | freshly grated is the best for this recipe!

How to Make Instant Pot Risotto

Step-by-step video instructions below.

Press the sauté button on the Instant Pot and melt the butter in the pot. Add onion and garlic and sauté for about 3 minutes. Press the cancel button.

Mix in the rice, broth, salt and pepper.

Close and lock the lid. Set the steam-release switch to sealing. Set cooking time to 6 minutes at high/normal pressure.

Release pressure using manufacture’s quick-release.

Open lid and stir in peas and cheese. Let stand for 2 minutes.

Ingredients

  • 3 tbsp butter
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 arborio rice
  • 3 cups vegetable broth
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup frozen peas
  • 1/2 cup freshly grated Parmigiano-Reggiano

Instructions

  1. Press the sauté button on the Instant Pot and melt the butter in the pot. Add onion and garlic and sauté for about 3 minutes. Press the cancel button.
