This Everyday Air Fryer Chicken salad has flavourful juicy chicken topped on a bed of arugula, sliced cucumbers, creamy avocados and dressed with a simple tangy dressing. It can be made in under 20 minutes or meal prepped and brought for lunch.
I love adding chicken to salads because it’s a great source of protein that can be as flavourful as you want it! In this recipe I seasoned the chicken with cumin, oregano, garlic powder and paprika. However any of your favourite chicken seasonings will work for this recipe.
I use the T-fal air fryer that is perfect for 2 pieces of chicken breast. I like to season the chicken and put it in the air fryer for 8 minutes. Then flip the chicken, add a tiny bit more seasoning and place chicken back in air fryer for another 8 minutes. Make sure not to over cook the chicken otherwise it will be dry.

Ingredients
- 1 Chicken breast
- Pinch of oregano, cumin, garlic powder and paprika (or use your favourite seasoning)
- 2–3 cups organic baby arugula
- 1/4 cucumber, sliced
- 1/4 avocado
Dressing
- 1 tbsp avocado oil
- 1 tsp maple syrup
- 1 tbsp lemon juice
- pinch of salt
Instructions
- Season chicken with spices. Place in air fryer at 350°F for 8 minutes then flip and cook for another 8 minutes (make sure chicken is fully cooked, time can vary depending on size of chicken).
- In the meantime, place arugula, cucumbers and avocado in a bowl.
- Add dressing ingredients to a small sealable container and shake it up.
- Once chicken is cooked, cut into smaller pieces and place on salad.
Notes
- If chicken is frozen, it will need more time in air fryer.
- If bringing this salad to go, dress salad right before eating.
