Holiday Roasted Beets with Mandarin Oranges & Mint

Pair this recipe with a protein rich entrée and baked potatoes and you have an easy healthy meal!

Another healthy holiday side recipe idea! woop woop! Including BEETS!
Beets are definitely an acquired taste as they have an earthy and sometimes bitter taste. I personally really like them roasted with various herbs. Beets pair really nicely with a sweet fruit such as mandarin oranges. Beets and mandarin oranges are basically at any grocery store this time of year making them easily accessible for this recipe. The finally ingredient in this recipe, yes there are only three ingredients(!), is mint! Mint is a fresh herb which really kicks this holiday recipe up a notch. It provides a fresh taste without overpowering the other ingredients.
This recipe is really easy to make however I recommend putting it together right before serving otherwise the colour from the beets will get all over the oranges. This will happen no matter what, but if you are looking for a nicer presentation put it together right before to avoid the oranges from turning totally red from the beets. The beets can be roasted and then stored in the fridge so it is not much to put it together right before hand!

Beets

Beets are a root vegetable that contain an earthy, bitter taste. They are rich in nutrients including betalains, a phytonutrient {food pigment} which gives beets its vibrant colour. This phytonutrient also has anti-inflammatory and detoxification benefits. They are rich in fibre, folate, vitamin C, manganese and potassium.

Holiday Roasted Beets with Mandarin Oranges & Mint

Description

Healthy Holiday Side! Roasted beets with mandarin oranges and mint! Great to pair with a protein and potato for an easy holiday meal!


Ingredients

Scale
  • 1 tbsp olive oil
  • 3 beets, washed
  • 5 mandarin oranges, peeled
  • 3 tbsp chopped mint

Instructions

  1. Preheat oven to 375 degrees F.
  2. Coat beets in olive oil then wrap in aluminum foil and place on baking dish.
  3. Place in oven for approximately 45 minutes.
  4. Once they are finished roasting, remove from aluminum foil and let cool.
  5. After cooling for approximately 10 minutes cut into 1 inch pieces and remove the skin.
  6. Place in large bowl with mandarin oranges and mint.
  7. Enjoy!

Notes

Roasted beets can be made ahead of time and stored in the refrigerator until ready to put the salad together.
Put this salad together right before you need to serve it that way the beets won’t get all over the oranges as quickly.
