There’s nothing better this time of the year than enjoying a cozy delicious bowl of soup! Yes, this soup is healthy (and looks healthy) but it’s also filling and delicious! This soup is great on it’s own but I also love to add shredded chicken to the soup as well for some extra protein. A side of buttery french bread also pairs nicely with this soup on occasion;)

Ingredients
- Onion
- Carrots
- Celery
- Green beans I love green beans in this recipe as they add a great texture
- Green Lentils Green lentils are best in this recipe (compared to red lentils) as they hold their shape after cooking unlike red lentils.
- Yukon potatoes Creamy potatoes diced into small cubes
- Vegetable Broth Chicken and beef broth work too!
- Spices Cumin, oregano and salt. Feel free to adjust the amount of salt to your liking.

How to make Instant Pot Lentil Soup with Potatoes
Instant Pot
- Simply add all ingredients to Instant Pot (I used a 6 quarts for reference).
- Close lid, set pressure to sealing and pressure cook on high for 15 minutes. Instant Pot will take 20 minutes to come to pressure.
- Once cooking is complete, quick release pressure from Instant Pot. This will take a few minutes.
Notes
- Leftovers: Place leftover soup in an airtight container in the refrigerator for up to 4 days.
- Reheat: Heat leftover soup in microwave or on stove over medium-low heat.
- Freezer: Store in airtight container in the freezer for up to 3 months. Let thaw overnight in the refrigerator before reheating.

- 3 Yukon potatoes, diced into small pieces
- 8 cups vegetable broth
- 1 tbsp Cumin
- 1 tbsp oregano
- 1 tsp salt
Instructions
- Add all ingredients to Instant Pot.
