One of my goals this year is to improve my baking skills and while we are all stuck at home, there is no better time for this. With Easter right around the corner, I was inspired to make mini egg rice crispy squares using pantry staples (if youâre like me, mini eggs are a pantry stapleđ).

Ingredients in this recipe
- Honey (substitute with maple syrup or brown rice syrup)
- Peanut butter (substitute for any nut butter)
- Vanilla
- Mini eggs
- Brown rice crisps
- Dark Chocolate chips
- Coconut oil
how to make
- Using a large pot, melt honey, peanut butter and vanilla on low-medium heat. Stir until everything is well combined and has a creamy texture. Make sure temperature of stove is not too hot otherwise mixture will burn.
- Remove from heat, then stir in rice crisps and mini eggs. Using a large pot is important for this step so that everything mixes nicely.
- Line a 8″x8″ baking dish with parchment paper and press the rice crisps into the dish. Use a spatula or clean hands to press it tightly into the dish.
- Melt chocolate and coconut oil in the microwave or double boiler and pour it over the rice crisps base. Quickly top with mini eggs so that the mini eggs settle nicely with the chocolate.
- Place it in the fridge for an hour.

tips for this recipe
- Once rice crisps are ready, remove from the fridge and let it sit on the counter for about 15 minutes. Run a sharp knife under warm water and then wipe it dry. Cut into squares applying even pressure to the knife to get perfect squares.
- Cut into 9 or 12 even squares.
- Store: keep these square in the fridge for up to 4 days. Take them out about 15 minutes before you’re ready to eat to soften.

Ingredients
- 1/2 cup honey (maple syrup or brown rice syrup works too)
- 1/2 cup creamy natural peanut butter
- 1 tsp vanilla
- 2 cups brown rice crisps
- 1/3 cup chocolate eggs, chopped + about another 3/4 cup for topping, chopped (like mini eggs, or store brand chocolate eggs)
- 1 1/2 cups dark chocolate chips
- 1 tbsp coconut oil
Instructions
- In a large pot, melt honey, peanut butter and vanilla* (see note below). Stir until combined. Remove from heat and stir in rice crisps and chopped chocolate eggs.Â
- Line a 8″x8″ baking pan with parchment paper and press mixture into pan. Place in freezer while melting chocolate and coconut oil together (in microwave or double boiler).Â
- Pour melted chocolate over rice crisps mixture. Sprinkle chocolate eggs over chocolate. Place in fridge for an hour to harden.Â
- Remove from fridge 15 minutes before eating to soften chocolate and so it’s easier to cut into squares.
Notes
*Feel free to double the base to get a thicker rice crispy layer (like in the photos/video shown). To double the base, use: 1 cup honey, 1 cup creamy natural peanut butter. Remaining ingredients are the same.Â

These are so simple and fun to make! I doubled it…and I did feel it was too sweet but that’s an easy fix maybe next time I will keep half the honey. Or was I meant to also double the rice crispies? I did use regular white on those as I didn’t easily find brown rice ones…I also added some collagen powder for an extra boost of protein They are so good! and so fun! I like that you made healthy swipes like honey and natural peanut butter. I will most definitely make these again and just alter the decoration.
