Baby potatoes, Brussels sprouts, carrots and onions roasted in a creamy garlic butter sauce is the perfect side dish for the holidays or any weeknight dinner!

- Baby potatoes
- Brussels sprouts
- Carrots
- Yellow onion
- Salt & black pepper
Garlic Butter Ingredients
- Butter
- Garlic
- Fresh parsley
- Fresh rosemary
How to Make this Roasted Vegetable Medley
- Preheat oven to 400 degrees F and line an extra large baking sheet with parchment paper for easy clean up.
- In a large bowl add baby potatoes, Brussels sprouts, carrots and onion.
- In a small bowl, mix all garlic butter ingredients. Pour over vegetables and toss.
- Place vegetable mixture on prepared baking sheet. Spread out as much as possible (use 2 separate baking sheets if overcrowding). Season with salt and pepper.
- Bake for 30 minutes, tossing halfway.

we love zucchini and asparagus along with the carrots, onions, potato (we are not brussel sprout fans). I haven’t tried it with the seasoning you mention so that will be my next twist on the roasted veggie recipe. Thank you!

Would much prefer it if you had an alternative to add chicken quarters. This is not a one-pan meal. Deleting from recipe files.
