Vegan Taco Lettuce Wraps

These vegan taco lettuce wraps are ready in 30 minutes! Made with vegan ground meat, fresh vegetables and unlimited toppings, this will be your go-to healthy summer meal!

Vegan Ground Meat

The main ingredient in this dish is the vegan ground meat. If you have not tried vegan ground meat before I highly suggest trying this recipe! Vegan ground meat simply requires heating so it’s quicker than regular meat. Below you will find a list with links to vegan ground meat options.

How to make the base of these Vegan Taco Lettuce Wraps

  • Sauté onion with olive oil then add bell pepper and mushrooms. Feel free to swap these vegetables with ones you have or would prefer.
  • Once vegetables have soften, add vegan ground meat and taco seasoning. Use store bought taco seasoning or make your own!

Putting it all together

  • Add about 1/4 cup of the cooked taco meat onto a large romaine lettuce or butter lettuce. Add more or less depending on the size of the lettuce leaf.
  • Top with tomatoes, and then add your favourite toppings. Mine include guacamole (or mashed avocado), salsa, cilantro and vegan sour cream. Drizzle with lime juice for some added zest!

Meal Prep

  • This recipe makes approximately 3 servings so you can have leftovers for lunch or dinner. Store the cooked taco meat in the fridge and then reheat and top over lettuce.

Other base options

  • Butter lettuce or romaine lettuce (what I used in this recipe)
  • Regular soft or crunchy tortilla
  • On a bed of chopped lettuce (Taco salad – less messy than lettuce wraps!)
  • Over cooked pasta

Description

Ingredients

Scale

Base

  • 1 tsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups vegan ground meat
  • 1 tsp taco seasoning 

Lettuce Wraps

  • 12 Butter lettuce or large romaine leaves
  • 1 tomato, diced

Toppings

  • Guacamole
  • Salsa
  • Vegan sour cream
  • Cilantro

Instructions

  1. Heat a frying pan with olive oil and an onion. Sauté for 2 minutes then add bell pepper and mushrooms. Cook until vegetables have soften (about 5 minutes). Add vegan ground meat and heat through, toss in taco seasoning, mixing everything together
  2. Place about 1/4 cup of taco meat on each lettuce leaf. Add tomatoes, cilantro and your choice of toppings.
