What I ate Wednesday #9 (WIAW)

I can’t believe it’s Wednesday already! This week has been flying by! I am currently in the middle of working on a design for something special coming out within the next month or so. Does it ever happen to you when you’re working or studying and you get in the zone and forget about everything including to eat!? Well that has been me pretty much this entire week. I know last week I didn’t get around to posting a What I ate Wednesday, totally slipped my mind, but this week I made a point of leaving my camera out as a reminder!

For breakfast I had whole grain toast with natural peanut butter, some pineapple and raspberries. I know those fruits are not in season but they still tasted delicious!
Of course I can’t go anywhere in my house without my huge mason jar filled with water.

whole wheat toast, peanut butter and fruit breakfastFor a snack I had my typical cauliflower, carrots and broccoli with hummus as a snack.

Since I was busy working away on my special project, I ordered food in from a local organic cafe. I had a spinach salad with beets, red onion, tomatoes and a greek dressing. I also ordered the freshly squeezed lemonade which tasted amazing! Lemonade is probably one of my favourite drinks, I’ll drink it even in November!

cocobean winnipeg lunchFor dinner I was inspired by Mckel from Nutrition Stripped  to top quinoa and veggies with an egg. I love eating quinoa and veggies with chicken but never thought to top it with an egg! It was delicious! I also sprinkled some lemon juice over top. It’s a good, healthy dinner to make in about 10 minutes.

    That quinoa and egg bowl is so delicious. My sister and I used to do a similar thing with meat instead of eggs, but it makes perfect sense with an egg.

    Super yummy eats! I wish I had some sort of organic cafe here, but I live in the middle of nowhere :( The dinner looks delish! I love the texture adding an egg to a dish gives. I used to do that a lot, but lately eggs haven’t been sitting well in my stomach!

      I know my city didn’t have many organic cafes but the past couple years seems like they’ve been popping up everywhere, which is awesome.

    That salad looks amazing, I am such a beet addict.

    I definitely forget about food when work is busy, but I hate the opposite, when things are slow and all I can think about is food. :(
