What I ate Wednesday: Road Trip Edition! (WIAW #5)

I am back from my two-week road trip! It was so much fun seeing new cities, traveling through small towns, meeting people, and going on a ton of tours & excursions! The first two days of the trip were travel days, 12 hours in the car both days till we hit our first stop, Houston! Before the trip I stocked up on foods like nuts, Lara bars, dried fruits and other healthy goodies we could bring across the boarder (can’t bring produce unfortunately!). I am working on a full blog post on how to eat healthy while on a road trip so I won’t go into too much detail here but let me tell you, if you are not prepared, it will be difficult to find healthy options. {Update: How to eat healthy while traveling resource guide here} Luckily we scouted out the routes and planned stops where we knew there would be healthy options available. We also stopped into a Whole Foods and picked up some healthy on the go foods (like salads, yogurts, pre-made hot dishes, etc.).

This “What I ate Wednesday” post (I realize it is a day early but I have not posted in a couple days so I just went ahead and posted it today!) is from a day when we were in Nashville. At the beginning of the trip we went to Whole Foods and I purchased a few different kinds of cold-pressed juices. A lot of our hotels came with continental breakfasts but you never know what kinds of food they will have and some of them had barely any fruit so I was glad I stocked up on fruit and juices! This particular morning I had the Suja Elements Cold-Pressed juice to get my day started. This is the Mango Fuego flavor and it was delicious and refreshing!

healthy road trip breakfastWe went to the Country Music Hall of Fame in the morning then walked around downtown and spent a lot of time listening to the musicians on Broadway Street and hitting up the shops. It was so much fun, I cannot wait to go back! After that we went back to our hotel where we ate some food that we bought from they grocery store while on our way into Nashville. I had a kale salad that had chickpeas, carrots, red onions, lettuce, cranberries, feta cheese and seeds topped with a sweet onion dressing. I also tried the Raspberry Terere Guayaki Yerba Mate beverage that is made from naturally caffeinated leaves in South America. I believe we have this beverage in Canada but I was on vacation so I didn’t mind spending $3 on it (normally I would pass and just drink water! :P)! It was super delicious though!

What I ate Wednesday Lunch
After lunch we hung around the hotel for a couple of hours to refresh and visit the pool. I did a lot of research before the trip for things to do and see but also looked into local restaurants and juice bars. Dietitian Mckel, from Nutrition Stripped lives in Nashville and I saw on her blog she has a section where she lists her fav restaurants & coffee shops (super helpful!). A lot of them seemed to be near the downtown area and near our hotel so we headed to The Wild Cow that night for dinner. This is a vegetarian restaurant that has so many great options, vegan options too! I recommend it even to those who are not vegetarian (like me!).

We started with the Spinach and Artichoke dip appetizer that came with bread (not the healthiest but it was really delicious!).

The wild Cow NashvilleFor our entrees I had the Veggie Quinoa Bowl with Tofu. It was filled with roasted vegetables and quinoa. It was so nice to eat something that wasn’t a salad or chicken! The garlic aioli sauce made this dish taste amazing! I definitely recommend! The Wild Cow is extremely reasonably priced, this entree was less than $10 even with the added tofu. If you live in Nashville or going their to visit, I would definitely recommend this restaurant. It was pretty busy when we got there and it’s not a big place but we only had to wait a few minutes to be seated. The service was quick & friendly too! :) This isn’t sponsored, I just really liked it! :P

They also had some vegan/vegetarian desserts that looked amazing but we skipped on those! -too full!

The wild cow NashvilleThe following day we went to the juice bar Juice Nashville which has cold-pressed juices. It was so refreshing after walking around and seeing more of downtown.
