What I ate Wednesday & Updates

I can’t believe it’s been two and a half weeks since my last post. It has been a very busy couple weeks with my bday, moving and more! I am so happy to finally have the time to sit down and blog! I have a couple recipes posts in the works but for today I wanted to share a WIAW post since it has been a couple weeks! Before we get into what I ate, I will show you some photos of things I’ve been up to this week!

Here is a peak into one of my kitchen cabinets {definitely the most organized one}. Does anyone else love organizing things? I love going onto Pinterest to get inspiration from others and then creating a space that works for me! I have a fairly small space, with minimal things so it’s fun to rearrange things as I go and see what works and what doesn’t. Just today I purchased a spice rack which fits to the right rather than all the spices lined up. It’s a lot easier to see and grab things! I really like putting seeds, grains, dried fruits, etc. in mason jars as the majority of these I buy in bulk or come in non-resealable bags. The mason jars keep everything dry and sealed tight. You can also easily label the tops!

And just to throw a little eye candy into the post, here’s a picture from the Luke Bryan concert;) We were in the pit and it was THE BEST.

Breakfast

Typical weekday breakfast: non-fat plain Greek yogurt topped with muesli {under all the fruit!}, strawberries, blueberries and blackberries. I also had some orange juice in my new pineapple mug from ilycouture!

Lunch

Lunch is what I like to call a protein power bowl! Egg, quinoa, spinach and tomatoes topped with lemon juice. Super simple but packed with flavour.

Snack consisted of carrots, cauliflower, cucumber and hummus as I was organizing my kitchen.

For dinner I had chicken, vegetables and rice. I thought I took a picture of it but I can’t seem to find it! I also wanted to mention I made peanut butter cookie dough bites from the Oh She Glows cookbook and they are seriously delicious. I love that they require no baking, minimal ingredients and are sweet yet filling. Perfect dessert! Here’s a picture of how they turned out. Fairly close to the cookbook picture I would say!

I am so glad to finally have the time again to write these posts! Thank you all for sticking with me as I took a little break! I am back and ready to blog blog blog!
