What I ate Wednesday (WIAW #10)

This past week I have been trying new recipes and tweaking old ones. I have been eating a lot of tasty leftovers and trying to use up ingredients in my fridge/pantry. This weeks “What I ate Wednesday” has a sneak peak of upcoming recipes I will be posting on the blog so stay tuned for those! In the meantime, here are photos of what I have been eating! easy healthy oatmeal muesli

For breakfast, I had oatmeal topped with muesli and apple slices. I love eating oatmeal in the winter because it so warming and super nourishing. See the full recipe & more about muesli here.

Lunch

  • 1/2 avocado spread on two pieces of whole grain toast topped with mushrooms. I normally top this with tomatoes but the mushrooms actually made a great combination
  • Kale salad topped with pomegranate seeds, almonds and dried cranberries. SO GOOD!

healthy lentil and vegetable soup

For dinner, I had lentil & vegetable soup. I like to batch cook soup recipes and freeze it in small portioned out containers. This is perfect on the days I am rushed or don’t feel like cooking! I also always look forward to eating this soup because it is so nutritious and tasty!
