What I ate Wednesday (WIAW #18)

Hi everyone! This week was filling with many delicious dishes and I took a lot of pictures! So let’s dive into this week’s What I ate Wednesday post!

Breakfast

Under all the fruit in this bowl is oatmeal! I love oatmeal in the mornings because it is very filling, nourishing and can be topped with lots of fruit! I used my oatmeal recipe and topped it with fresh berries, mango and star fruit! I had never actually purchased a star fruit before {I’ve only tasted it at restaurants} so when I saw my local grocery store had a couple I knew I needed to purchase one! They are a tropical fruit, loaded with vitamins and fibre. I would say the flavour is slightly bland with a hint of citrus. Overall not the most flavourful fruit, but it definitely makes any dish more vibrant! I think it would be a great addition to top on a salad, baked good or even in water if you wanted to brighten things up!

If you read my last WIAW post then you will know I had a spelt pizza kit that came with 4 individual spelt pizza crusts and tomato sauce. This week I decided to top it with spinach, cherry tomatoes and ham! I normally am not someone who reaches for ham, but this actually came out super delicious! Any suggestions on types of pizza I should make this week?!

Dinner was super simple, I think taco salad is very underrated! This dish took only  20 minutes to prepare. Starting from the bottom it has whole grain taco chips, then beef, sautéed red, orange and yellow bell peppers and mushrooms, and finally topped with tomatoes and avocados. Last week I posted a blog post about how to build a healthy plate and this is a great example- Lots of veggies, protein and healthy fats!

    All of your meals look super fresh, vibrant [yes to eating the rainbow!] and delicious. And now I want pizza for lunch. Have you ever tried adding chickpeas? I know it sounds odd but they’ve become one of my favourite toppings.

    I love taco salads. I eat at least one a week!
    If you’re looking to try a non-traditional type of pizza, hummus (instead of tomato sauce) and roasted veggies (ie: brussels and sweet potato) make a great topping combo.
