What I ate Wednesday (WIAW #20)

Happy Wednesday everyone! I can’t believe this is my 20th WIAW post! I love sharing what I’ve been eating and enjoy finding new blogs to read through the WIAW link up party on Peas and Crayons blog. Definitely check it out if you are looking for recipe inspiration.

I am glad this week I have been getting into blogging a bit more and I even created a VIDEO!! I posted it at the end of this post and would really appreciate feedback! :)

Now let’s get on with what you all came here for! This weeks What I ate Wednesday!

Breakfast

For breakfast, I had chia pudding that I made the night before. Simply combine chia seeds, almond milk, vanilla and maple syrup in a bowl and let it sit overnight. In the morning top with fresh berries! The texture is a little different but the longer it sits {best overnight} the better it tastes.

Lunch

I had a quick lunch, whole grain bread with eggs and avocado. I have been loving this combination lately and it only takes about 5 minutes to make!

Snack

Watermelon & passion fruit! If you’ve never tried passion fruit it is super sweet and pairs great with watermelon. YUM.

Dinner

For dinner I made chicken seasoned with Mrs.Dash original seasoning, a quinoa salad from Costco given to me by my mom {thanks mom! :P} and a prepackaged mixed salad. I really like prepackaged salads but I normally pass on the dressing if it comes with one. I am fairly simple when it comes to dressing- olive oil and lemon is normally my go-to!
