What I ate Wednesday (WIAW) #3

Happy Wednesday everyone! Hope you’re all having a great week so far. I can’t believe it’s Wednesday already! I am leaving for a road trip to the southern states, which I am super excited about, but it has been taking up a lot of my time, I just want to leave already! Counting down the days- If anyone knows of some great things to do/see/restaurants in Houston, Baton Rouge, New Orleans, Nashville let me know!

Anyways, let’s get on with this weeks “What I ate Wednesday” post!

Breakfast

WIAW- whole grain toastI started the day off with…. NOT A SMOOTHIE!? Shocker since I have been obsessed with my vitamix ever since I got it, but I wanted to switch it up today. I had some whole grain toast topped with raw peanut butter, banana and cinnamon. Such an easy breakfast and also makes a great snack or post workout snack. I like to add a few blueberries and pineapple slices to sweeten it up as well! This combination is also great in a wrap.

Snack

Fruit- what i ate wednesdaySnack: Pineapple, cherries, blueberries and raspberries! What’s a morning without a big plate of fruit!?

Lunch

lunch, lean turkey breast WIAWFor lunch I had a turkey wrap with hummus, spinach, carrots, and bell peppers. I also had a side of strawberries, blackberries and blueberries. This is one of my favorite lunches because it is so easy to make, can easily be brought to work/school and takes less than 5 minutes to prepare. See more of my fav wraps here.

As you can see I also like to drink plenty of water with my meals because obviously water is super important!

Dinner

Summer Kale saladFor dinner I ended up going to a friends and I forgot to take pictures while I was there! (Still getting the hang of these WIAW posts ;) ). I brought my Summer Kale Salad which is always delicious and super healthy! We also had some chicken and corn on the cob (no picture!). I feel like lately I’ve been trying to make the most out of fresh summery produce, as a lot will be out of season soon. It has been feeling like fall so much lately especially in the mornings. I don’t mind fall but I very much dislike winter, it gets so cold where I live, it’s ridiculous! Anyways I won’t start ranting about that just yet it’s only the beginning on September!

    I’ve been eating lots of pineapple lately – I can’t get enough of it.

    Have fun on your trip! While I haven’t been to any of those places I’d love to spend some time in all those cities.
