What I ate Wednesday (WIAW #8)

Hi everyone! Hope you’re having a wonderful week! This week has been pretty busy! Working on some recipe development, improving my monthly nutrition challenges, and diving into some behind the scenes stuff I’ve been putting off for awhile (I am a beginner with the whole blog formatting and coding thing so it seems to take double the time, but it’s fun learning!) After coming down with a cold that knocked me out pretty good for a couple of days (I rarely get sick but it was bound to happen since EVERYONE I seemed to come in contact with was sick), I was able to get back into my regular workout routine. I love going to Barre class! It’s such an intense workout, that incorporates cardio, flexibility and strength.
Anyways, let’s get on with what I ate!

After drinking about 500ml of water, I made my green smoothie! Normally, it’s a vibrant green colour but I loaded it with frozen blueberries. I love this smoothie, it’s filling, provides so many nutrients and contains carbs, fats & protein! Great start to the day and a good pre workout meal.
After Barre class, I like to eat a Lara bar (dates, peanut butter and cashews) on my way home. no photoGreen smoothie for glowing skinBefore lunch I ate some hummus with cauliflower, carrots and broccoli. no photo. This is a typical snack for me mid morning because it’s filling, easy to make and nutritious.

For lunch I was feeling like some pasta! I cooked up some brown rice pasta and it was seriously delicious! I don’t eat a lot of pasta but when I do I savour every bite!! I just topped it with some organic pasta sauce and stuck a spinach leaf on top for the photo! :P

brown rice pastaFor dinner, I went to Mongos Grill for a friends birthday. If you’ve never been/heard of Mongos, you create your own stir fry and they have selections of veggies, noodles, chicken, beef, fish, sauces etc. Mine consisted of lots of veggies, tofu, and brown rice.

    Yum, your day looks delicious.

    We have a similar place to Mongo’s and I love going overboard on vegetables there. It’s a good way to change up your veggie intake from a traditional salad. Love it!
