What I ate Wednesday (WIAW#12)

Hope everyone is keeping warm! This past week has been extremely cold…like -40 cold. I have however been eating lots of soup and warm foods which are always delicious! I tried out a few new recipes over the holidays, some I’ve already shared and some that I will be posting soon. Here is a sneak peak of recipes I have been trying & eating! Be sure to link up your WIAW posts here and join in!

Breakfast

I absolutely LOVE hash browns. I’ve experimented with healthy ways of cooking hash browns over the last year but they never seemed to get very crispy until now! I make these hash browns all the time now because they are so easy to make. Full recipe here. This creamy avocado spread is also really yummy and great to make on those mornings when you’re pressed for time.

Snack

This has recently been one of my favorite snacks because it’s super filling, delicious and healthy. I mean you can’t really ask for more out of a snack! All I do is combine chickpeas, cherry tomatoes and slices cucumbers. See more healthy snacks that take under 5 minutes here.

Lunch

Like I mentioned earlier, soups have been one of my fav go-to lunches and dinners this week. This is a combo of vegetables/noodles/beans etc. Recipe will be coming soon!

Dinner

This dinner is great to make when you have leftover chicken because it can be made in under 10 minutes. Simply spread hummus over whole wheat/gluten free wrap and top with spinach (any veggies you like) and chicken! Supplement chicken for tofu or tempeh if vegan/vegetarian.

    It’s been pretty cold and snowy here too. I’ve had soup for lunch the last couple days as well.
