Description

Healthy and delicious greek salad to bring to your next dinner party or to work for lunch! This salad is so versatile and is perfect anytime!


Ingredients

Salad

  • 1 cup cooked red quinoa
  • 1 cup white beans
  • 1 head lettuce, chopped into small pieces
  • 1 cup cherry tomatoes, chopped
  • 1 cucumber, peel and roll into 3 cucumber ribbons*, chop the rest
  • 5 radishes, sliced
  • 1/2 red onion, chopped
  • 1/2 cup basil, chopped
  • 1/2 cup parsley, chopped
  • Kalamata olives
  • Pepperoncini peppers

Dressing

  • 5 tbsp extra-virgin olive oil
  • Juice from 1/2 lemon
  • 1/8 tsp dried oregano
  • Pinch of salt and pepper

Instructions

  1. Place all salad ingredients in a large bowl.
  2. Whisk together dressing ingredients and dress salad. Toss everything together and serve. 

Notes

*To make cucumber ribbons, cut cucumber in half, then slice length wise. Peel the cucumber to create 3 thin cucumber slices. Roll each cucumber slice. See video for visual.

Add more quinoa if bringing this salad for lunch to boost the protein.
