Healthy and delicious greek salad to bring to your next dinner party or to work for lunch! This salad is so versatile and is perfect anytime!
Ingredients

Salad
- 1 cup cooked red quinoa
- 1 cup white beans
- 1 head lettuce, chopped into small pieces
- 1 cup cherry tomatoes, chopped
- 1 cucumber, peel and roll into 3 cucumber ribbons*, chop the rest
- 5 radishes, sliced
- 1/2 red onion, chopped
- 1/2 cup basil, chopped
- 1/2 cup parsley, chopped
- Kalamata olives
- Pepperoncini peppers
Dressing
- 5 tbsp extra-virgin olive oil
- Juice from 1/2 lemon
- 1/8 tsp dried oregano
- Pinch of salt and pepper
Instructions
- Place all salad ingredients in a large bowl.
- Whisk together dressing ingredients and dress salad. Toss everything together and serve.
Notes
*To make cucumber ribbons, cut cucumber in half, then slice length wise. Peel the cucumber to create 3 thin cucumber slices. Roll each cucumber slice. See video for visual.
Add more quinoa if bringing this salad for lunch to boost the protein.
