Ingredients

  • 3 cups arugula
  • 1 cup long grain rice, cooked {see packaging for accurate instructions}
  • 1/2 cup red grapes, sliced
  • 1/4 small red onion, sliced
  • 3 tbsp cashews, chopped
  • Black pepper
  • Dressing
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar
  • Pinch of salt

Instructions

  1. Begin by combining all dressing ingredients together.
  2. Toss together arugula, rice, grapes, red onion and top with cashews and black pepper. Combine salad with dressing.
  3. Enjoy!
