Avocado Bow Tie Pasta Salad is easy, vegan and delicious! It is a great summer recipe that can be enjoyed for lunch or brought to a BBQ!

- 2 cups uncooked bow tie pasta salad {whole grain}
- 1 small cucumber, sliced
- 2 cup lettuce, chopped
- 1 tomato, sliced
- 1 avocado
- 1 tsp salt
- 1 tsp pepper
Instructions
- Begin by cooking the bow tie pasta as per the instructions.
- Once pasta is finished cooking, rinse pasta under cold water.
- In a small bowl, mash 1 avocado and mix in salt and pepper
- In a large bowl. combine pasta, vegetables and avocado mix and gently mix.
- Enjoy!
