Description

Avocado Bow Tie Pasta Salad is easy, vegan and delicious! It is a great summer recipe that can be enjoyed for lunch or brought to a BBQ!


Ingredients

Scale
  • 2 cups uncooked bow tie pasta salad {whole grain}
  • 1 small cucumber, sliced
  • 2 cup lettuce, chopped
  • 1 tomato, sliced
  • 1 avocado
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Begin by cooking the bow tie pasta as per the instructions.
  2. Once pasta is finished cooking, rinse pasta under cold water.
  3. In a small bowl, mash 1 avocado and mix in salt and pepper
  4. In a large bowl. combine pasta, vegetables and avocado mix and gently mix.
  5. Enjoy!
