Chia Seed Pudding with Raspberry Jam is a delicious and filling snack or breakfast idea!
Ingredients

- 1/2 cup unsweetened coconut milk
- 2 tbsp chia seeds
- Dash of maple syrup
- Raspberries (small handful)
- Toppings– optional
- Shredded coconut
Instructions
- In a small container, add coconut milk, chia seeds and maple syrup.
- Stir, to mix it all up.
- Place in refrigerator overnight (or for at least 4 hours).
- When ready to eat, mash raspberries with a fork and then top onto chia pudding.
- Sprinkle with shredded coconut (optional).
