This bow tie pasta salad with creamy avocado dressing makes the perfect lunch! Loaded with good carbs, beans, whole grains and more! Great vegetarian/vegan recipe!

- 3 cups bow tie pasta, cooked, see packaging for instructions {choose whole grain pasta or a gluten-free alternative}
- 1/2 cup black beans
- 1/2 cup corn
- 1/4 cup cherry tomatoes, sliced in half
- Dressing
- 1/2 clove garlic
- 1/2 avocado
- 1/2 cup basil
- 1/2 cup spinach
- 1 tbsp lemon juice
- 1 tsp hemp seeds
- 1 tsp nutritional yeast
- Pinch of salt
Instructions
- Begin by adding all dressing ingredients to high speed blender or small food processor until creamy consistency is reached.
- In a large bowl, combine cooked pasta, beans and corn.
- Then mix in pesto dressing and top salad with cherry tomatoes.
- Makes two good portions!
