Description

This bow tie pasta salad with creamy avocado dressing makes the perfect lunch! Loaded with good carbs, beans, whole grains and more! Great vegetarian/vegan recipe!


Ingredients

Scale
  • 3 cups bow tie pasta, cooked, see packaging for instructions {choose whole grain pasta or a gluten-free alternative}
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup cherry tomatoes, sliced in half
  • Dressing
  • 1/2 clove garlic
  • 1/2 avocado
  • 1/2 cup basil
  • 1/2 cup spinach
  • 1 tbsp lemon juice
  • 1 tsp hemp seeds
  • 1 tsp nutritional yeast
  • Pinch of salt

Instructions

  1. Begin by adding all dressing ingredients to high speed blender or small food processor until creamy consistency is reached.
  2. In a large bowl, combine cooked pasta, beans and corn.
  3. Then mix in pesto dressing and top salad with cherry tomatoes.
  4. Makes two good portions!
  5. Enjoy right away!
