Quick & Easy dish to bring to a gathering or enjoy for lunch!


Ingredients

Scale
  • 1 cup corn
  • 1 cup black beans
  • 1 cup quinoa, cooked
  • 1/2 cucumber, chopped small
  • 1 tomatoes, diced small
  • 1/2 cup green onion, chopped
  • 1 tbsp olive oil
  • 1/2 tbsp garlic powder
  • 1/4 cup lemon juice
  • Drizzel with lime juice
  • Sprinkle with Nutritional Yeast

Instructions

  1. Combine black beans, corn, quinoa and vegetables in a bowl.
  2. In a separate bowl wisk together oil, lemon juice, garlic powder and lime juice.
  3. Drizzel dressing over black bean/corn dish then sprinkel with nutritial yeast.
  4. Enjoy!
