Description

Creamy Broccoli Salad with crunchy spiralized vegetables makes the perfect side dish or lunch idea! Eating veggies can be easy when paired with your favourite spice blend and creamy non fat greek yogurt! Purchase prespiralized vegetables or spiralize them yourself!


Ingredients

  • 1 medium head broccoli, chopped into 1 inch pieces
  • 1 cup spiralized sweet potato
  • 1 cup spiralized beets
  • Dressing
  • 1/2 cup Plain Greek yogurt (0% MF)
  • 1 tbsp of your favourite spice blend (I like to use Herb & Garlic from Tasty Tidbits)
  • Toppings
  • Sliced almonds
  • Golden seedless raisons

Instructions

  1. In a medium sized bowl, combine broccoli, sweet potato and beets.
  2. In a separate small bowl, mix together greek yogurt and spice blend to make a creamy dressing.
  3. Top dressing over medium bowl with vegetables.
  4. Sprinkle with almonds and raisons.
  5. Enjoy as a side dish or enjoy with a hard boiled egg for lunch!
