Crispy Tofu
- 1 tbsp avocado oil
- 1 (350g) block of extra firm tofu, squeeze out excess water then cut into cubes
- 1.5 tbsp arrowroot powder (or cornstarch)
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Wrap Ingredients
- Whole-wheat soft tortilla wrap (or gluten-free option)
- 2 tbsp hummus per serving (homemade or store bought)
- Lettuce, chopped
- Tomato, sliced
- Cucumber, sliced
- Avocado, pitted and sliced
Instructions
Cooking Tofu
- In a medium bowl, add cubed tofu, arrowroot powder, garlic powder, salt and pepper. Gently toss with your hands.
- Heat olive oil in pan over medium-high heat and add tofu. Cook tofu on each side for about 3 minutes or until golden.
Putting it together
- Spread hummus on tortilla wrap. Top with lettuce, cucumber, tomatoes, tofu and avocado.
