Crispy Tofu Hummus Wrap is the perfect healthy lunch idea that is creamy, crispy and loaded with fresh ingredients!


Ingredients

Crispy Tofu

  • 1 tbsp avocado oil
  • 1 (350g) block of extra firm tofu, squeeze out excess water then cut into cubes
  • 1.5 tbsp arrowroot powder (or cornstarch)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Wrap Ingredients

  • Whole-wheat soft tortilla wrap (or gluten-free option)
  • 2 tbsp hummus per serving (homemade or store bought)
  • Lettuce, chopped
  • Tomato, sliced
  • Cucumber, sliced
  • Avocado, pitted and sliced

Instructions

Cooking Tofu

  1. In a medium bowl, add cubed tofu, arrowroot powder, garlic powder, salt and pepper. Gently toss with your hands.
  2. Heat olive oil in pan over medium-high heat and add tofu. Cook tofu on each side for about 3 minutes or until golden.

Putting it together

  1. Spread hummus on tortilla wrap. Top with lettuce, cucumber, tomatoes, tofu and avocado.
