Description

Holiday Garlic Roasted Carrots Recipe makes the perfect healthy side to any dish! Keep the stems on the carrots gives this dish a nice presentation.


Ingredients

Scale
  • 2 bunches of carrots with stems (approximately 12 carrots)
  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 3 garlic cloves, minced
  • 1 tsp. dried thyme
  • 1 tsp. oregano leaves
  • 1 tsp. salt
  • 1 tsp. black pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Begin by cutting the stems off the carrots, leaving about 1 inch of the stem still on the carrot.
  3. Wash and peel carrots, then lay them on a baking dish lined with aluminum foil.
  4. Add all remaining ingredients to a small bowl, stir then drizzle onto carrots and coat evenly.
  5. Add carrots to oven for approximately 35-45 minutes until carrots are soft enough that you can easily poke with a fork.
  6. Remove from oven and serve immediately.
  7. Enjoy!
