Description

Spend less time cooking up side dishes this year by making this Holiday Roasted Potato and Vegetable Medley recipe! This recipe includes potatoes and vegetables leaving you with more time to focus on the holiday main dish! 


Ingredients

  • 1.5 lbs baby potatoes, sliced
  • 2 cups baby carrots, sliced
  • 2 handfuls of green beans, trimmed
  • 1 cup mushrooms
  • 2 tbsp olive oil
  • 2 tbsp fresh garlic, minced
  • 1/4 tsp salt
  • pepper

Instructions

  1. Preheat oven to 425 degrees F.
  2. Add potatoes to a large pot with water and bring to a boil. Cook for 8 minutes, until fork easily pokes through potato. Drain potatoes.
  3. Place potatoes, baby carrots, green beans and mushrooms on large baking sheet and toss with olive oil, garlic, salt and pepper.
  4. Place in oven for 20 minutes.

Best served immediately after cooking.
