Honey Cashew Chicken

Ingredients

  • 1 tbsp olive oil
  • 2 chicken breasts, chopped into 1 inch pieces
  • Pinch of salt and pepper
  • 1/2 cup carrots, julienne
  • 1 cup snap peas
  • 1 cup broccoli
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • Sauce
  • 1/4 cup vegetable broth
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp arrowroot powder/cornstarch
  • 1 tbsp cold water
  • Toppings
  • 1/4 cup cashews, sliced

Instructions

  1. Heat olive oil, chicken, salt and pepper in a frying pan until chicken has slightly browned (about 15-20 minutes).
  2. In another frying pan (or same one if you have a large pan) add all vegetables to soften. Once chicken has finished cooking, add chicken to the vegetables.
  3. In a small bowl, combine vegetable broth, soy sauce and honey. Add sauce to vegetables/chicken pan. Quickly after whisk together arrowroot powder and water. Then pour over the vegetables/chicken. This will thicken the sauce. Stir everything together then serve.
  4. Top with cashews!
