Ingredients

- 1 tbsp olive oil
- 2 chicken breasts, chopped into 1 inch pieces
- Pinch of salt and pepper
- 1/2 cup carrots, julienne
- 1 cup snap peas
- 1 cup broccoli
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- Sauce
- 1/4 cup vegetable broth
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp arrowroot powder/cornstarch
- 1 tbsp cold water
- Toppings
- 1/4 cup cashews, sliced
Instructions
- Heat olive oil, chicken, salt and pepper in a frying pan until chicken has slightly browned (about 15-20 minutes).
- In another frying pan (or same one if you have a large pan) add all vegetables to soften. Once chicken has finished cooking, add chicken to the vegetables.
- In a small bowl, combine vegetable broth, soy sauce and honey. Add sauce to vegetables/chicken pan. Quickly after whisk together arrowroot powder and water. Then pour over the vegetables/chicken. This will thicken the sauce. Stir everything together then serve.
- Top with cashews!
