Description

Light and refreshing Italian Pasta Salad that makes a great side or dish for a potluck or party!


Ingredients

Scale
  • Pasta
  • 3 cups fusilli brown rice pasta
  • 1/2 cup carrots, shredded
  • 1/4 cup celery, chopped
  • 1/4 cup cherry tomatoes, sliced
  • 1/4 cup broccoli, chopped very small
  • 1/4 cup red onion, chopped
  • Italian Dressing
  • 3 tbsp red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp oregano leaves
  • 1 tsp garlic powder
  • 1 tsp coconut sugar {or use honey}

Instructions

  1. Begin cooking pasta in boiling water for about 20 minutes.
  2. Once cooked, drain and add to a large bowl.
  3. Add the remaining pasta ingredients to the bowl and stir
  4. Dressing
  5. Combine all Italian Dressing ingredients into a small bowl and whisk well.
  6. Dress pasta salad with Italian dressing and store in the fridge for about 10-15 minutes {or longer} so that the dressing can soak into the pasta.
