Kale Quinoa Salad

Description

This salad is packed with protein, fibre, nutrients and also tastes great.


Ingredients

Scale
  • 1/2 cup black quinoa
  • 1 cup water
  • 5 cherry tomatoes, sliced in half
  • 1 yellow bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1/2 cucumber, sliced
  • 1 tbsp olive oil
  • 1 lemon, juiced

Instructions

  1. Add quinoa to boiling water then let simmer, cover and stir occasionally
  2. In meantime, cut up vegetables
  3. Once quinoa has soaked up all the water, remove from heat and place in bowl
  4. Top with vegetable, olive oil, lemon juice and mix well
  5. Enjoy!
