Description
There’s nothing better than warm soup on a cold winter day! This soup is packed with nutrients that will leave you feeling energized for the rest of the day.
Ingredients

- 1 can (540ml) lentils, rinsed
- 1 can (540ml) chickpeas, rinsed
- 3 carrots, peeled & chopped
- 3 celery stalks, chopped
- 2 garlic cloves, minced
- 1/4 onion, chopped
- 4 cups organic vegetable broth
- 1 lemons, juiced
- 2 basil leaves
- 1 cup organic spinach
- 2 tbsp olive oil
Instructions
- In a large saucepan, add olive oil and sauté spinach, carrots, celery, and onion until vegetables are soft
- Add organic vegetable broth and lemon juice and bring broth to a boil
- Add lentils, chickpeas and basil, continue boiling for 5 minutes
- Simmer and stir occassionally for 15 minutes
