Loaded Greek Chicken Salad Pizza

Description

Loaded Greek Chicken Salad Pizza is the perfect healthy dinner! Get in those veggies with every bite!


Ingredients

Scale
  • Chickenbatch cook and keep extras in the fridge!
  • 1 chicken breast
  • 1 tsp olive oil
  • Pinch of garlic powder
  • Pinch of paprika
  • Pizza Base
  • 1 regular size whole grain tortilla wrap
  • 1/4 cup pizza sauce [choose a brand with minimal ingredients or make your own!]
  • Greek Salad
  • 2 cup romaine lettuce, chopped
  • 1/2 cup english cucumber, diced
  • 1/4 of a red onion, sliced
  • 1/2 red bell pepper, chopped
  • 4 cocktail tomatoes, sliced
  • 5 kalamata olives, pitted
  • 1/2 avocado
  • 3 tbsp Primal Kitchen Greek Salad Dressing

Instructions

  1. Preheat oven to 350 degrees F
  2. In a glass baking dish, coat chicken with olive oil, then sprinkle with garlic powder and paprika
  3. Place in oven for 30 minutes (turning over after 15 minutes)
  4. Pizza Base
  5. Place tortilla wrap on a baking sheet and spread with pizza sauce
  6. Place in oven for about 5 minutes (to warm it up and to harden the tortilla wrap a bit)
  7. Greek Salad
  8. Combine all greek salad ingredients and mix together
  9. Once chicken is finished cooking, let cool for about 5 minutes, then cut into bite size pieces
  10. Add chicken to greek salad and mix
  11. Putting it together
  12. Remove tortilla wrap from oven and place greek salad on top
  13. Press salad down onto pizza
  14. Using a pizza slicer, slice pizza into 6 slices.
