Easy 5-Minute Salad

Description

This fresh and flavourful salad can be tossed together in less than 5 minutes. It makes the perfect side dish or even main dish when topped with a protein. A perfect go-to healthy salad for working at home!


Ingredients

Salad

  • 1/2 cucumber, chopped
  • about 15 cherry tomatoes (or grape tomatoes), sliced in half
  • 1/2 avocado, pitted and chopped
  • 1 tbsp. fresh basil, chopped

Vinaigrette*

  • 1/2 cup olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 2 garlic cloves, minced
  • Pinch of salt and pepper

Greek Chicken Marinade**

  • 3 chicken breasts
  • 1 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp. fresh thyme
  • 1 tsp. fresh oregano
  • 1 tsp. fresh parsley
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Add salad ingredients to a bowl.
  2. Add vinaigrette ingredients to small jar or bowl and mix.
  3. Toss 1 tbsp of vinaigrette with salad ingredients.
  4. Top with cooked chicken pieces or a vegetarian protein (optional).

Greek Chicken Marinade Directions:

  1. Oven: Place all ingredients in a sealable plastic or reusable bag. Place in fridge overnight (or for at least 2 hours). Preheat oven to 400°F and place chicken and marinade in a baking dish for about 20 minutes (or until chicken reaches an internal temperature of 165°F).
  2. Air Fryer: Place all ingredients in a sealable plastic or reusable bag. Place in fridge overnight (or for at least 2 hours). Place chicken breasts in air fryer basket and cook at 400°F for about 12-15 minutes (or until chicken reaches an internal temperature of 165°F).

Notes

*You only need about 1 tbsp of the vinaigrette. Store the leftovers in the fridge and use throughout the week. 

**Meal prep the greek chicken ahead of time and simply toss in the salad when ready to eat.
