Peanut Butter Tofu

Description

Crispy tofu tossed in a thick peanut butter sauce is a delicious vegetarian meal idea! Serve over rice, coconut rice or rice noodles.


Ingredients

Scale

Tofu

  • 1 block (350g) extra firm tofu
  • 1 tbsp cornstarch
  • 1 tsp olive oil
  • 1/2 tsp salt

Peanut Butter Sauce

  • 1/2 cup smooth, natural peanut butter
  • 1/4 cup soy sauce (or tamari)
  • 1/3 sesame oil
  • 2 tbsp rice vinegar
  • 1 inch grated ginger
  • 2 garlic cloves

Garnish with green onion and sesame seeds.

Serve over rice, coconut rice or rice noodles.


Instructions

Tofu

  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper. 
  • Place tofu in-between a clean towel or paper towel and squeeze out excess water. Slice tofu into cubes. Toss tofu with cornstarch, olive oil and salt until evenly coated. 
  • Spread out the tofu on a baking sheet and place in oven for 25 minutes, flipping halfway. 

Peanut Butter Sauce

  • Add all sauce ingredients to a food processor and pulse until combined. 

Putting it all together

  • Heat a pan over medium heat and add crispy tofu and 1/4 cup of the peanut butter sauce. Cook for about 2 minutes, tossing and heating the sauce. 
  • Serve over rice, coconut rice or rice noodles

Notes

  • Adding Vegetables: Add vegetables, such as broccoli, bell pepper and/or mushrooms in a large pan/wok until they are soft. Then add the crispy tofu and peanut sauce and toss everything together (feel free to add the rice or rice noddles too at this point). Make sure to add a bit more peanut sauce to make up for the additional ingredients!
