Description

Quinoa Tabbouleh is a great dish for vegetarians or vegan as it is loaded with plant-based protein and loaded with flavour!


Ingredients

Scale
  • 2 cups quinoa
  • 4 cups water
  • 1/2 cup spinach
  • 1 cup chickpeas
  • 1 small cucumber, sliced into fourths
  • 1/2 cup cherry tomatoes, sliced
  • 1 tbsp chopped parsely
  • 1 tbsp chopped mint
  • Dressing
  • 3 tbsp olive oil
  • Juice from 1 lemon
  • Pinch of salt

Instructions

  1. Begin by bringing quinoa and water to a boil {while water is coming to a boil, steam spinach over this water to soften the spinach, this will only take 1-2 minutes}
  2. Once water is boiling, remove the steamer {spinach should have softened} then cover quinoa and bring to a simmer for approximately 20 minutes.
  3. After 20 minutes, all water should be gone and quinoa should be soft.
  4. Place quinoa in a bowl and let cool.
  5. Combine dressing ingredients in a small dish and then pour dressing over quinoa.
  6. Then add all remaining ingredients to the bowl {spinach, chickpeas, cucumber, cherry tomatoes, parsley and mint}.
  7. Gently combine all ingredients and enjoy!
