Raspberry Vanilla Parfait

Description

Bake this sweet granola on the weekend so you can enjoy this super easy and fancy breakfast throughout the week! Takes less than 2 minutes to put together!


Ingredients

Scale
  • 1 1/2 cups oats
  • 1/4 cup dried cranberries
  • 1/4 cup almonds, chopped
  • 1/4 cup walnuts, chopped
  • 2 tbsp chia seeds
  • 2 tbsp coconut sugar
  • 3 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • Vanilla non fat greek yogurt {I suggest to use about 1/2 cup per serving}
  • Fruit: raspberries, blueberries and blackberries

Instructions

  1. Line a baking sheet with parchment paper and preheat over to 350 degrees F.
  2. In a large bowl combine oats, cranberries, almonds, walnuts, chia seeds, coconut sugar and top with coconut oil, honey and vanilla extract.
  3. Lay granola on baking sheet and firmly press granola together so there is a cluster in the middle of the baking sheet.
  4. Bake for 20 minutes.
  5. Once granola is done, let cool and break apart larger clusters of granola. Store in air tight container or enjoy right away!
  6. To make parfait, simply layer granola, greek yogurt, fruit and repeat as many times as you would like!
  7. Enjoy!

Notes

Granola makes about 4 cups of granola.
