Teriyaki Chicken with Roasted Broccolini and Mushrooms

Description

Teriyaki Chicken roasted with broccolini and creamy mushrooms on one baking sheet makes the perfect, easy, go-to lunch idea!


Ingredients

Scale
  • 2 chicken breasts, cut into 1-inch pieces
  • 1/4 cup teriyaki sauce
  • 810 pieces broccolini
  • 3 cups cremini mushrooms, chopped into quarters
  • 1 tbsp
  • 1 tsp oregano leaves
  • Pinch of salt
  • 58 cherry tomatoes, sliced
  • 2 tbsp green onion, chopped
  • 1 tsp sesame seeds

Instructions

  1. In a bowl, marinate chicken in teriyaki sauce for about 20 mins.
  2. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  3. Add broccolini and mushrooms to the baking sheet and add olive oil, oregano leaves and salt.
  4. Add marinated chicken to the baking sheet and place in oven for 20 minutes.
  5. Remove from oven and add cherry tomatoes to baking sheet. Place back into oven for 10 more minutes.
  6. Remove from oven, place in bowl and top with green onion and sesame seeds.

Notes

This is a great recipe for batch cooking! Make on the weekend and portion out into containers for lunches during the week.
