Refreshing Quinoa Salad

Description

Light and refreshing quinoa salad made with fresh vegetables, chickpeas and tossed in a simple vinaigrette. Put together in 30 minutes for a light lunch or easy side dish!


Ingredients

Scale
  • 1 cup quinoa, uncooked
  • 1 cup chickpeas, drained and rinsed
  • 1 cup cucumbers, chopped
  • 1/2 cup tomatoes, diced
  • 1/2 cup red onion, diced
  • 2 tbsp feta
  • 1 tbsp fresh parsley

Vinaigrette

  • 1/2 cup olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 2 garlic cloves, minced
  • Pinch of salt and pepper

Instructions

  1. Bring quinoa and water to a boil, then reduce to a simmer and cover.  Cook for about 20 minutes, until water is absorbed and quinoa is light and fluffy. Set aside and let cool.
  2. Add vinaigrette ingredients to small jar or bowl and mix.
  3. Add remaining ingredients to large bowl and dress with vinaigrette.
