Description
Light and refreshing quinoa salad made with fresh vegetables, chickpeas and tossed in a simple vinaigrette. Put together in 30 minutes for a light lunch or easy side dish!
Ingredients

- 1 cup quinoa, uncooked
- 1 cup chickpeas, drained and rinsed
- 1 cup cucumbers, chopped
- 1/2 cup tomatoes, diced
- 1/2 cup red onion, diced
- 2 tbsp feta
- 1 tbsp fresh parsley
Vinaigrette
- 1/2 cup olive oil
- 3 tbsp white wine vinegar
- 1 tbsp maple syrup
- 1 tbsp dijon mustard
- 2 garlic cloves, minced
- Pinch of salt and pepper
Instructions
- Bring quinoa and water to a boil, then reduce to a simmer and cover. Cook for about 20 minutes, until water is absorbed and quinoa is light and fluffy. Set aside and let cool.
- Add vinaigrette ingredients to small jar or bowl and mix.
- Add remaining ingredients to large bowl and dress with vinaigrette.
