Air Fryer Stuffed Chicken Breasts

Description

Juicy chicken breasts stuffed with melted cheese, steamed broccoli and sautéed mushrooms is a delicious healthy meal idea. This recipe is great for meal prep, low in carbohydrates and a good source of protein.


Ingredients

  • 1 tsp olive oil
  • 227g pack of mushrooms
  • 2 cups broccoli, chopped 
  • 1 cup cheddar cheese, shredded 
  • 1/4 tsp. garlic powder

  • 1/8 tsp. salt

  • 1/8 tsp. black pepper
  • 5 chicken breasts

Instructions

  1. Heat pan with olive oil, add mushrooms and sauté until soft and brown (about 8 minutes). While mushrooms are cooking, steam broccoli. Let cool slightly. 
  2. In a large bowl, add sautéed mushrooms, steamed broccoli, cheese, garlic powder, salt and pepper. Mix until combined.
  3. Cut a slit in each chicken breast to make a pocket large enough to stuff with the mixture. Season both sides of chicken breast with more salt and pepper. Stuff each chicken breast with about 1/4 cup of the filling (amount will vary depending on how big/small chicken breasts are). 
  4. Place stuffed chicken breasts in air fryer basket (you may need to do this in batches). Place in air fryer at 390°F for 10-15 minutes or until chicken breast reaches internal temperature of 165°F.

Oven Instructions

  • Preheat oven to 375°F. Place stuffed chicken breast in baking dish and bake for about 20-25 minutes or until chicken is fully cooked.
