Juicy chicken breasts stuffed with melted cheese, steamed broccoli and sautéed mushrooms is a delicious healthy meal idea. This recipe is great for meal prep, low in carbohydrates and a good source of protein.
I love Air Fryer Stuffed Chicken Breasts because it requires only a few ingredients, it’s super delicious and great for meal prep. Win, win, win! This recipe on it’s own isn’t enough calories for a complete meal, however it pairs well with regular rice, cauliflower rice, salad, potatoes, and so much more. In case you don’t have an air fryer, I’ve included the directions when baking in the oven (which tastes just as delicious if you ask me!).
Ingredients
This recipe includes a few simple ingredients:
- Chicken Breasts | Chicken breasts are the base of this recipe and are large enough to cut a slit and make a pocket for stuffing
- Olive Oil | or olive oil spray to help sauté mushrooms
- Mushrooms | a must in my opinion but feel free to swap with a vegetable (bell peppers, shredded carrots, etc.)
- Broccoli | boosts the nutrition content and a broccoli/mushroom/cheese combo is my personal fav!
- Cheddar cheese | adds flavour and creaminess
- Garlic Powder | adds a bit more flavour
- Salt & Pepper | a must for added flavour (add as little or as much as you’d like!)
How to make Air Fryer Stuffed Chicken Breasts
- Heat pan with olive oil, add mushrooms and sauté until soft and brown (about 8 minutes). While mushrooms are cooking, steam broccoli. Let cool slightly (so that the cheese doesn’t full melt in the following step). I love my Always pan from Our Place (pictured above), as it’s nontoxic, large and comes with a steamer basket.
- In a large bowl, add sautéed mushrooms, steamed broccoli, cheese, garlic powder, salt and pepper. Mix until combined.
- Cut a slit in each chicken breast to make a pocket large enough to stuff with the mixture. Season both sides of chicken breast with more salt and pepper. Stuff each chicken breast with about 1/4 cup of the filling (amount will vary depending on how big/small chicken breasts are).
- Place stuffed chicken breasts in air fryer basket (you may need to do this in batches depending on the size of your air fryer). Place in air fryer at 390°F for 10-15 minutes or until chicken breast reaches internal temperature of 165°F.
No Air Fryer? No problem. Here are the oven instructions:
Preheat oven to 375°F. Place stuffed chicken breast in baking dish and bake for about 20-25 minutes or until chicken is fully cooked (internal temperature must be at least 165°F).
What Air Fryer can I use?
I love my air fryer- I have the Cosori Air Fryer (from Amazon). It’s big enough to fit 4 full chicken breasts and you can set the exact time and temperature you need. If you have a smaller air fryer, you can still make this recipe, you may just have to adjust the cook time (ensure the chicken is fully cooked). Or alternatively, I have included oven instructions below.

How to store
- Store cooled stuffed chicken breasts in an airtight container for up to 3 days. This recipe makes great leftovers!
