Easy-to-make Banana Chocolate Chip Protein Muffins are a delicious snack, dessert or grab-and-go breakfast.

Ingredients
Here are the simple ingredients in these muffins:
- Spelt flour | spelt flour is easier on the digestive tract than other forms of wheat flours therefore those with intolerances may be able to tolerate it, however spelt flour is not gluten free
- Chocolate protein powder | any kind will work. I personally like the Genuine Health Vegan Protein Powder in Chocolate
- Coconut sugar
- Baking powder
- Baking soda
- Bananas | make sure they are ripe
- Eggs
- Honey
- Almond milk | unsweetened
- Butter
- Dark chocolate chips
How to Make Banana Chocolate Chip Protein Muffins
Preheat oven to 350 degrees F and line muffin tin with parchment paper liners or use silicone muffin liners.
In a large bowl, whisk together spelt flour, protein powder, coconut sugar, baking powder, baking soda.
In a smaller bowl, mash bananas (use fork or potato masher). Then whisk in the eggs. Add honey, almond milk and melted butter. Whisk until well blended.
Add liquid mixture to the dry ingredients and mix (but do not over mix). Fold in chocolate chips.
Divide batter evenly into 12 muffin cups using a muffin scoop. Bake for 17 minutes or until toothpick comes out clean.
Remove muffin tin from oven and let sit on counter for 5 minutes. Remove muffins and let cool completely on cooling rack.
How to store
Store these muffins in an airtight container on the counter for 3-4 days.
