Overnight oats are a go-to breakfast in our house. They are easy to meal prep, making it convenient to have a healthy breakfast ready to go in the morning. In the summer, I was obsessed with making Key Lime Overnight Oats, but now that it’s colder out, I love topping my base overnight oats recipe with warm apples, heated with maple syrup and cinnamon. So so good!
Ingredients
- Rolled oats | old fashioned rolled oats are the best to use for overnight oats
- Cashew milk | or any nut milk
- Vanilla Greek yogurt | coconut yogurt or regular yogurt works too!
- Chia seeds | helps thicken recipe and a great source of fibre
- Maple syrup | sweetens recipe
Apple Crisp Topping
- Apple
- Maple syrup
- Cinnamon
How to make Apple Crisp Overnight Oats
Mix all overnight oats ingredients into a bowl. Cover and place in refrigerator overnight. Less than 10 minutes of prep!
In the morning, place apple crisp toppings into a bowl and microwave for 45-60 seconds. If you have more time on hand (or don’t own a microwave), you can sauté the ingredients in a pan over medium heat for about 8 minutes or until apples have softened.
From here, you can either portion out overnight oats into 3 containers and top with the apple cinnamon mixture or, store the overnight oats base and apples separate. I like to store them separate that way I can reheat the apple/cinnamon mixture the next morning.

Overnight Oats Base
- 1 1/2 cups rolled oats
- 1 cup cashew milk
- 1/2 cup vanilla Greek yogurt (coconut yogurt or regular yogurt work too!)
- 2 tbsp chia seeds
- 1 tbsp maple syrup
Apple Cinnamon Crisp Topping
- 1 apple, cut into small cubes
- 1 tbsp maple syrup
- 1/4 tsp cinnamon
Instructions
- Mix all overnight oats ingredients in a bowl. Cover and place in refrigerator overnight.
- In the morning, place apple cinnamon crisp toppings in a bowl and microwave for 45-60 seconds. Alternatively, you can sauté ingredients in a pan over medium heat for about 8 minutes or until apples have softened.
- Portion out overnight oats into 3 containers and top with warm soft apples*. Add additional toppings like pecans and hemp seeds (optional).
Notes
*I recommend storing the apple mixture separately that way you can reheat it and top it on the overnight oats when ready to eat. That way it’s nice and warm!
