This low carb turkey meatball recipe is a go-to favourite of mine because it’s quick to make and super flavourful. This recipe is made with minimal ingredients and ready in about 30 minutes!
Traditionally, meatballs are made with beef and served on a bed of pasta. As much as I love a traditional meatball recipe, today we are shaking things up with this super easy low carb turkey meatball recipe. Made with ground turkey, almond flour (instead of breadcrumbs) and a few other ingredients listed below. Meatballs are so versatile as they can be served in marinara sauce with a side salad. Or give your next salad a boost of protein by topping it with this meatball recipe (without the marinara sauce of course).
Ingredients
These low carb meatballs are made with a few simple ingredients:
- Ground turkey | The base of this recipe, I prefer lean ground turkey
- Almond flour | use almond flour as a low carb option in place of breadcrumbs
- Ricotta cheese | add some delicious flavour and creamy texture
- Fresh parsley | chopped, for a fresh flavour
- Salt & pepper | ground turkey can be a bit bland so make sure to add salt and pepper
- Onion powder | a must for flavour
- Garlic powder | another must for added flavour ;)
- 1 egg | binds everything together
Toppings: Rao’s marinara sauce is a good low carb option (can be purchased at Costco). I also like to top this recipe with fresh parsley and parmesan cheese.
How to make low carb turkey meatballs
1.Preheat oven to 400°F and line a baking sheet with parchment paper- good for easy clean up.
2. Add meatball ingredients to a large bowl and mix until combined. I like to use my hands to mix everything up!
3. Roll into balls (I use a medium size cookie scoop for same size meatballs). Place on baking sheet about 1 1/2 inches apart.
4. Bake for 20-23 minutes or until fully cooked. Internal temperature should reach 165°F with food thermometer.
5. Heat marinara sauce in large pan, once meatballs are done, place in pan with sauce and coat. Serve with parmesan cheese and parsley.
How to store
Can I make these meatballs ahead of time?
Yes, cook meatballs, let cool then store in fridge for up to 3 days. Reheat by placing meatballs in single layer in baking dish. Cover with foil (to prevent them from drying out) and place in oven at 300°F for about 10 minutes or until heated through.
Can I freeze these meatballs?
Yes! Let cool then store in freezer bag or container for up to one month.
