Ingredients
This recipe contains a few simple ingredients:
- Linguine pasta | regular pasta or use a gluten-free pasta
- Chicken breasts | adds protein to the recipe (you can also use chicken thighs)
- Bacon | optional, but totally recommend for added flavour!
Dairy-Free Creamy Sauce
- Olive oil
- Onion
- Garlic
- Flour | regular or use gluten-free flour
- Coconut Milk | 1 400ml can of coconut milk (make sure it’s full fat as this gives it the creaminess)
- Chicken Broth | if making this recipe gluten-free, make sure the chicken broth you are using is gluten-free as some contain wheat
- Lemon Juice
How to make Creamy Dairy-Free Linguine with Chicken
- Cook linguine pasta according to package directions.
- In the meantime, heat large pan with olive oil. Add chicken pieces and season with salt and pepper. Cook chicken until full cooked (about 12 minutes), tossing to cook each side. Remove chicken from pan and set aside.
- Using the same pan the chicken was cooked in, heat olive oil, then add onions and cook for 2 minutes. Add garlic and cook for another 2 minutes. Whisk in flour for about 1 minute (until it lightly browns) then add coconut milk and chicken broth. Whisk everything together and letting sauce simmer for about 10 minutes until it thickens. Once thick, stir in lemon juice.
- Add cooked linguine and chicken to the thickened sauce. Toss everything together. Top with chopped bacon and garnish with parsley.
How to Store:
Store in airtight container in fridge for up to 4 days. Tastes delicious as a meal prepped lunch or dinner!
