Creamy Dairy-Free Linguine with Chicken

Description

This restaurant-style creamy linguine pasta dish is a delicious comfort meal that is dairy-free and can easily be made gluten-free. This recipe is great for meal prep and is made with mostly pantry staples.


Ingredients

Scale
  • 8 oz. linguine pasta (can also use a gluten-free pasta)
  • 1 tbsp. olive oil
  • 3 chicken breasts, cut into 1 inch square pieces
  • salt & pepper
  • 4 bacon strips, cooked and chopped
  • Garnish with parsley

Dairy-Free Creamy Sauce

  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 3 tbsp flour (or use gluten-free flour)
  • 1 400ml can coconut milk (full fat)
  • 1 cup chicken broth*
  • 1 tbsp lemon juice

Instructions

  1. Cook linguine pasta according to package directions.
  2. In the meantime, heat large pan with olive oil. Add chicken pieces and season with salt and pepper. Cook chicken until full cooked (about 12 minutes), tossing to cook each side. Remove chicken from pan and set aside.
  3. Using the same pan the chicken was cooked in, heat olive oil then add onions and cook for 2 minutes. Add garlic and cook for another 2 minutes. Whisk in the flour for about 1 minute (until it lightly browns) then add coconut milk and chicken broth. Whisk everything together and letting sauce simmer for about 10 minutes until it thickens. Once thick, stir in lemon juice.
  4. Add cooked linguine and chicken to the thickened sauce. Toss everything together. Top with bacon bits and garnish with parsley.

Notes

  • *if making this recipe gluten-free, ensure the chicken broth you are using is gluten-free as some contain wheat.
