An easy weeknight meal that includes a few simple and fresh ingredients. This recipe makes great leftovers for lunch the next day and pairs well with many side dishes like rice, potatoes, salads and more!

This recipe includes a few simple ingredients:
- Chicken breasts | boneless and skinless
- Olive oil
- Italian seasoning
- salt & pepper
- Slices of mozzarella cheese
Bruschetta
- Roma tomatoes
- Garlic cloves
- Olive oil
- Balsamic vinegar
- Fresh basil
- salt and pepper
How to Make Baked Chicken Bruschetta
- Preheat oven to 375°F.
- Rub both sides of the chicken breasts with olive oil, Italian seasoning, salt and pepper. Place chicken breasts in baking dish.
- Bake chicken for 12 minutes. Flip chicken over and place in oven for another 12 minutes. Top each chicken breast with mozzarella cheese for the last 3-5 minutes of cooking (ensure chicken reaches an internal temperature of 165°F, cooking time may vary depending on the size of your chicken breasts).
- Place all bruschetta ingredients in a medium size bowl and mix together.
- Plate chicken and top with bruschetta when ready to eat.
